Easy Dessert Recipe – Layered No-Bake Strawberry Cheesecake

Layered No-Bake Strawberry Cheesecake can be made in a matter of minutes. It’s a light and refreshing spring and summer cake with fresh strawberries nestled on a Golden Oreo crust, vanilla cheesecake layer, and lick-the-bowl-good strawberry filling. There’s no artificial flavor and colors!!!



Golden Oreo Crust:

  • 28Golden Oreo cookies
  • 1/3 CupUnsalted butter-melted
  • 1011 oz. Fresh strawberries, hulled. Slice in half

Vanilla Cheesecake Layer:

  • 1 1/4 teaspoons gelatin
  • 1 1/2 TablespoonCold water
  • 12 oz. cream cheese-room temperature
  • 1 CupPowdered sugar
  • 2 teaspoons vanilla
  • 2/3 CupHeavy whipping cream

Strawberry Layer

  • 1 1/4 teaspoons gelatin
  • 1 1/2 TablespoonCold water
  • 5 oz. cream cheese- room temperature
  • 2/3 CupHeavy whipping cream
  • 1 CupPowdered sugar
  • 8 oz. Strawberries (pulsed in a food processer)


  • Strawberries

  1. For the crust, combine whole Oreo cookies and the filling. Pulse to form the fine crumbs. Mix in the melted butter. Stir with a fork until all the crumbs are evenly moistened.
  2. Place the ring made from a 9-inch springform pan on to a flat plate. For the crust, press the crumbs lightly.
  3. To cover the crust, arrange strawberries cut in half and set aside.
  4. To make the vanilla cheesecake, dissolve 1 ¼ teaspoons gelatin in 1 ½ Tablespoons cold water an set aside to bloom.
  5. Blend softened cream cheese with vanilla until smooth and creamy. Mix powdered sugar with a few Tablespoons of heavy whipping cream. Mix on low speed. Slowly add in the rest of the heavy crème and continue to mix on high speed.
  6. Dissolve gelatine over low heat. Stir to combine and then add it to cheesecake mixture.
  7. Spread the mixture over the crust and strawberries. Spread the mixture between the strawberries. Place in the refrigerator
  8. To make the strawberry layer, dissolve 1 ¼ teaspoon gelatin in 1 ½ Tablespoons cold water an set it aside to bloom.
  9. Strawberris can be placed in a food processor. Pulse until smooth.
  10. Blend softened cream cheese until smooth. Mix in the powdered sugar. Next, add a few Tablespoons heavy cream. Continue mixing on low speed. Then slowly add the reaaining heavy crème and continue to mix on high speed until it doubles in size.
  11. Add the pureed strawberries. This mixture will be thinner than the vanillla cheesecake mixture.
  12. Mix the gelatine in a saucepan over low heat. Stir to cool.
  13. Spread the mixture gently over the white layer. Smoothen the top and place in fridge for at most 4-5 hours, but preferably overnight, to firm up.
  14. After the cake has set, use a thin knife to wrap the springform pan’s ring. Once the ring is freed, you can remove it.
  15. As desired, garnish with strawberries and whipped cream
  16. Keep the refrigerator closed.

No-Bake Strawberry Cheesecake, a summer sweet treat, is made with just a few ingredients: butter and cream cheese, heavy cream, powdered Sugar, vanilla, gelatin, and golden Oreo crumbs.

This cake is light and creamy. The white layer is vanilla no-bake cheesecake. The strawberry filling is a cross between a mousse or a cheesecake. It’s made with more whipped cream and less cream cheese, than the vanilla layer. Therefore, it’s very light and airy, and full of fresh strawberry flavor. Instead of strawberry-flavored gellatine, I used fresh strawberries to add flavor and color.

For a filling that stays firm in the fridge, cream cheese, heavy cream and gelatin are combined.

Oreo crumbs and butter crust—no baking there either! They’re pressed down and as the butter cools, it keeps the mixture together. There’s no need to bake it to keep it together.

Tips and tricks for making no-bake cheesecake filling

Here are some tips for making this no bake cheesecake filling.

  • First, ensure the cream cheese remains at room temperature. It should feel soft when you press down on the package. Cold cream cheese becomes lumpy when mixed and you won’t be able to get the light and fluffy texture. Before making the cheesecake, let it cool on the counter for at most two hours.
  • Mix the cream cheese and powdered sugar together until you get rid of any clumps.
  • Use gelatine. It will not crack if you use gelatin in the no bake cheesecake. The gelatin in this recipe helps to firm the cheesecake and makes it easier to slice.
  • Dissolve the gelatin and sprinkle the gelatin over the chilled water in a microwave-safe bowl. Stir to moisten – it will look like applesauce. Allow the gelatin to soften for 5 minutes, then microwave it for 20-30 seconds until it is dissolved. Let cool. If you don’t have a microwave, place the gelatine in a small metal pot and melt it on the stove over low heat, stirring constantly.
